Don’t over stock dont over feed make sure it was cycled and work out why you have Ammonia .
In a properly cycled tank that is not over stocked ammonia should be 0 .
Water changes will lower ammonia but you need to look at why you have Ammonia and fix it .
Emergency fix os to do water changes
Long term is to understand how the nitrogen cycle works, get that running correctly and let the filter system take care of it for you.

The water changes are just an emergency fix to keep your fish alive while the tank cycles.

Yep 25%-50% water changes weekly. A gravel vacuum will do you some good
