talking of evolution, if both your parents were apparently vegetarians and you + your partner are vegetarians, would you evolve to be herbivorous humans?

Voluntary vegetarianism isn’t a biologically inherited characteristic. Vegetarians are as capable of eating meat as anyone else. They just choose not to.
For a population of humans to evolve to become herbivores you’d have to have them all mating among themselves, and there would have to be a better chance of survival or reproduction for those individuals that had an improved ability to digest vegetation and a worse ability to digest meat.
No, evolution doesn’t work that way. For example, talking about natural selection, if a human from Africa migrated to Europe, they would not immediately become ‘white.’ Evolution, like this, takes time and a lot of generations. You could become vegetarians, but as a species, humans are omnivores.
It’s not evolving if you are already doing it.
