Help with romantic dinner?

I want to make a nice romantic dinner for my boyfriend tomorrow. I want to poach fish in a Pinot gricio and water mix and then I was going to mix in butter and shiitake mushrooms. What kind of fish should I use? There is a place down the street that gets in all kinds of different fresh fish so I need choices. Also what should I do for a side? I just don’t know fish that well.

  • If it is available try Black Sea Bass. it is a wonderful white meat fish, very meaty and thick. It will absorb flavors very well. My second favorite would be red snapper, however if you go with red snapper, I would probably opt for grilling over poaching if possible If you do the Sea bass as a side I would recommend a nice white wine risotto and asparagus.   • I would suggest bass or something full white fish. This will pair very well with your Pinot Gris. While your with fish, you can also try oysters for your appetizer. Be sure to pick nice and fresh fish when you go to the market. Butter is good, you might want to add a little zing if you plan on Salmon or Marlin though like lemon butter sauce but if your pick is the Bass, I think your plan will work. For the sides, I would suggest peas, carrots and string beans or maybe potatoes and the mushroom with some greens.

  • It depends on how “fishy” he likes his fish. Some people love the bold flavor of fish like Salmon but many do not. To be on the safe side I would opt for a mild tasting fish like Tilapia. I also don’t think poaching is the way to go. Poaching will cook out all of the nutrients. If you grill or broil it, it will develop a nice lightly crisp crust and a tender flaky fish while preserving the flavor and nutrients. You don’t want to cook it too long though…fish cooks quickly. A nice lemon pepper spinkled on will be good with some fresh green beans. Blanch the green beans (boil for 1 minute) in some chicken stock and drain them. Heat a small amount of Olive Oil or butter in a sautee pan and toss the grean beans in. While they cook up for a minute finely dice some Shallots (or red onion if you don’t have shallots) and toss those in. Also toss in some slivered almonds (you can buy those already ready at Walmart for $1). Sautee that until the beans are tender crisp and the almonds are toasted. Sprinkle with sea salt and cracked black pepper. Voila. Fancy dinner for two. Its really much easier than it sounds. Enjoy!

  • Buy any type of fish you desire, I would recommend Halibut, swordfish, cod, or salmon===You can saute the mushrooms in the wine—The side dish could be baked potato’s, corn, or steamed rice with asian vegetables—–The best solution is not to overcook the fish–you have the right idea–add some parsley, dill, Old Bay Seasoning, Marjoram, thyme,rosemary, to the fish, and a splash of white wine,visualize the Pink light of love in the room and follow your instincts—Have Fun
