doesn’t matter what shampoo and conditioner I use, it always makes way too soft, and weighs it down. What shampoo and conditioner can I use that won’t do that, my hair is fine.

I would use only a little shampoo and conditioner if you have fine hair.
It sounds like you are using too much.
Humm, you should be happy it soft that good sign that healthy but if you want to make a little dryer, I guess you can try 2-1 shampoo/conditioner this one cleans with less moisturizer
