When one of the 6 cartridges runs low and then completely runs out before the others, do all 6 cartridges have to be replaced? Or just that one?

No just replace the empty one
Hello,
It depends on the printer make and model. Is it single level or multi level printer. I think you need to replace them all. Ink acts as a lubricant to the printer head. even if you did not use the other, some ink might have gone into the head.
Some manufactures insert chips into printers, which make the printer stop working even if a single cartridge is empty and others are filled. Some work in a smart way and allow replacement of only the single cartridge.
