You don’t really need any classes to be a pastry chef. For many years, pastry chefs never attended college or culinary schools. They got a cookbook (The Joy Of Cooking) and started refining their talent. You can tell from friends and family if you are making tasty treats. A head chef will treat you the same way. if you can prepare pastries and cakes and pies in a hectic (not always but sometimes) atmosphere, you will get hired.
