it is a byproduct of the amino acid “asparagine”, according to this wikipedia article. but the article also says that some people think it is methanethiol, which is another name for the “mercaptan” that the other poster mentioned. however i have worked extensively with mercaptan compounds in a chemistry lab and i know what they smell like — definitely not asparagus pee! more like burned poop. so anyway, i buy the asparagine argument.
