Yes they will know if you were on their payroll because of your ss#.
but however most employers will overlook it if it has been 6 months or longer.

Yes they can easily find out. I would have told the new potential boss the situation. But don’t sweat it. If you get an interview, tell the interviewer then. As long as you’re honest you won’t look shady.
