    I made vegan taco-style lentils the other day, served on whole grain organic taco shells, with romaine lettuce, tomatoes, and fat free plain yogurt. Freaking awesome. My daughter loved them, and my son got brave and tried one and loved it, too. Makes for great low-fat high fiber taco salads, too.

    Stock your cupboard with spices and herbs, and other delicious things like organic peanut butter, soy sauce etc. Buy healthier oils to cook your food with. Olive oil, groundnut oil and sunflower oil are some good choices. Avoid Lard, butters and margerines and processed vegetable oils.

    Make your own pasta sauces with tinned tomatos, spices, onions and garlics and lean meat or fish. Grill cuts of meat instead of pan frying and find healthier ways to consume starch. If you’re worried about conveniece learn which foods are easiest to make – forn example couscous can be simply hydrated with hot water, rather than having to boil rice or pasta.

    Healthy beed chilli

    Lean ground beef
    1 – 2 chopped onions
    garlic cloves to taste
    2 diced carrots
    2 sticks of celery, also diced
    2 cans of organic chopped tomato
    Your favourite spices – I sugges cummin, corriander, cinnamon, a bayleaf and crushed chilli
    low sodium salt and black pepper.
    1 stock cube
    a splash of wine.
    couscous to serve

    Saute 1/2 your onions on a medium heat in some sunflower oil. When the onion is limp and yellow add your beef. Cook till your beef is brown, then remove from the heat. Put it all in a seive and let it drain, removing the rest of the fat from the beef.

    while the beef is draining, saute the other 1/2 of your onion. When it is floppy but not yellow, add your spices and garlic. when the onion is a little browner, add your fresh dicedvegetables. Toss for a while then add your splash of wine. cook in the wine until you no longer smell alcohol, then add about 1/2 a cup of water and the stock cube. Cook a bit longer… then add the ground beef, beans and tinned tomatos. Simmer on a low heat for at least 1/2 an hour, adding extra water if you need to.

    Turn the heat up and keep stiring to let the sauce reduce. Taste test, and add flavourings such as penaut butter, apple sauce, lemon juice, pureed tomato, soy sauce or coffee if you notice something missing.

    Serve with your couscous.
