Cooking with alcohol?

I don’t drink alcohol often and I’ve never cooked with alcohol before but I’ve been dying to make these chocolate rum cremes but I mistakenly bought a spiced rum when the recipe calls for a white rum. The recipe only calls for 2 tbsp but I don’t know how much that would alter the recipe. I assume it does change the recipe but would it change it for the negative?

If it helps these are the ingredients:
3 1/2 oz of semisweet chocolate
2/3 cup of light cream
1 1/4 cups whipping cream
1 tbsp confectioners’ sugar
2 tbsp white rum

  • As you say that you don’t consume alcohol, I just want to break one misconception here; when you go for baking or cooking any dish for an hour or more, then 90-95% of alcohol gets evpavorated. Cooking with alcohol is an ancient method that just to bring that extra zing into the food.
    As the person above suggested go for spice rum, I would suggest the same. The only thing that remains in the food while you cook with alcohol is its “calories”. But 2 tablespoon hardly make any difference. So, go for it and try this for sure.

    Here I would like to add one quote which goes perfectly with the situation – cooking with wine is fun and sometimes I even add to the food.

  • It’ll make an interesting variation of the original recipe. If you can’t exchange it for the white rum, then use the spiced rum. It should be good.

  • It will make the chocolates taste different, but not alter the recipe. Use the same amounts. Just be sure you don’t mind the taste of the rum first.
