It is due to an organic compound cucurbitan, there’s more cucurbitan in wild species than cultivated ones. And thence, amount of cucurbitan varies … in addition it is more concentrated on the stem side(the top) than at the flower end(bottom).

U also think that rubbing removes Bitter taste from Cucumber! I had only asked earlier why some Cucumbers are bitter. I’ll also be delighted to know the reality.
Some can be bitter, but by rubbing the cut ends with a little salt will help draw that bitterness out of the cucumber. Pickle, anyone?

actually i used to think tht i was the only one who thinks rubbing can help thank god u also think like tht
although rubbing doesnot reduces bitterness fully but if u rub it and then eat it with black salt or kala namak then it tastes good and bitterness taste vanishes
rubbing the head of any one can make the taste good.BECAUSE dear taste is already registered in our heads. thanks.
