Is restaurant food cooked fresh or precooked?

You know like your Red Lobsters & Olive Gardens. Someone told me that they just warm the food up.

  • How much the average entree is will give you a good indication if its pre cooked or made fresh. If the average price is less that 10. per person it probably wasn’t prepared fresh. If the average prices is 20. per person then it probably is made fresh from scratch when you order it. 30. or more and I certainly hope your getting top notch ingrediants with great chefs. I know at Bonefish Grill where I work we make everything by hand. Even the salad dressing and whip cream on the deserts.

  • Heres the thing. You could par boil them which means partially cook them & then “shock” them which means rinsing with cold water or even dumping ice in the strainer with them, & then pre package your servings & finish cooking them as theyre ordered….BUT if you know anything about pasta you’ll know that when you cook it theres a starchy film thats on it. When you shock them & rinse them that starch comes off & the sauce doesnt stick to the pasta well. Thats why pros dont rinse their noodles. Your customers will likely spot the difference in quality as well. It only takes 4-12 minutes depending on the type & size of pasta to cook it. It usually takes that long to get the water boiling. They make special equipment for this. In the restaurant I worked in we had only one of these pans but we didnt cook much pasta, but anyway, it was a round pot with 4 wedge shaped straners that would go into it. You throw the portion in one & cook it, then lift it up & clip it on the edge for a minute to drain. Have your water already boiling & ready to go & get several of these pots & youll be fine. Keep extra pots of water on the back burner at all times to change the water in front when it gets too dirty or boils away. This way youll always have freshly made pasta & it wont take forever. It’ll take a couple extra minutes than the other way, but whats 2 minutes in return for a higher quality food? And if its possible, make your own pasta too.

  • If it’s a chain restaurant like Olive Garden, it’s sort of a combination of the two. The sauce, desserts, etc. are all pre-packed, but they make the pasta noodles fresh.

  • Depends on where you go and what it is. I know at my restaurant, we have both. Frozen and fresh. At a place like Red Lobster, I believe everything is fresh. I think that Olive Garden has both also.

  • Some of the stuff which takes a long time to prepare, I think are pre-cooked. The easier stuff is cooked fresh.

  • Most Ingrediants are simply prepped. Foods with long cooking times are “par” (partially) cooked. Roast chicken, roast beef, are par cooked until an order is made and then the cooking is competed.

  • It depends what restaurant you go to. Usually you can taste if it is fresh or not. My parents are professional chefsand they said if it is soggy itis usually warmed before!
